    A Sweet Story, Eventually

     
    P.S. 半是情人节的缘故,两周前做了这则Macaron专题。买了大大小小五彩缤纷的小圆饼,带回报馆拍照,一位同事探头问:“那是什么?是汉堡吗?”
     
    All about Macarons
     
      ◎历史与传统
      Macaron最初诞生于16世纪的威尼斯,以庆贺凯瑟琳·德·梅第奇嫁给亨利,也就是日后的法国国王亨利二世。法国版本的小圆饼则诞生于19世纪,由知名的宫廷甜点师Pierre Desfontaine创制,当时称为gerbet。
      如今,走在法国大街小巷,凡是咖啡馆或甜点铺,你都会看到这种小圆饼。它可以作为餐后搭配咖啡或茶的小点,也可以作为特殊日子的礼物。不过,Philippe师傅说,如果作为礼物,一定要准备一盒不同色彩和口味的小圆饼。

      ◎口味与质感
      什么样的macaron才算好吃?
      一句话概括:外壳决定口感,内馅决定滋味。
      与寻常饼干不同,法式小圆饼的口感非常独到:最外层薄而脆,一口咬下去,纷纷碎裂;上下两片饼干酥而轻透;咬到中间,馅心质地较厚,甚至要微微黏牙才好,给人有嚼劲的感觉(chewy)。
      以味道来说,经典的法式小圆饼口味包括巧克力、香草、草莓、覆盆子(raspberry)、橙和薄荷等;不过,小圆饼的魅力之一就在于口味灵活多变,只要善于调配,几乎任何口味都做得到。在本地,还找得到芒果、柠檬、酸柑、百香果、佛手柑、荔枝、凤梨、玫瑰、紫罗兰、开心果、榛果、咖啡、花生、芝麻等口味。
      对亚洲人而言,小圆饼偏甜,但那正是欧洲人喜欢的传统味道。

      ◎纯手工制作
      看上去像用模子烤出来的小圆饼,原来是纯手工制作。
      法国设有专门学做macaron的厨艺学校。以甜点来说,macaron往往被视为厨师的试金石,许多食评家进店来,不看巧克力蛋糕、水果塔、千层酥,单单就要macaron,成败全看这一枚。
      小圆饼要做到饱满细致,酥、脆、绵、柔、细、润、香、甜浑然一体,非常考功夫。看上去简单,每一步都得小心翼翼。
      以面团来说,袁师傅说,要搅拌至少40次,确保空气与面团充分融合;而且要手打,才能把握面团的轻重和质感。
      把面团挤到烤盘上时,虽然有事先画好的圆圈,厨师还是得全神贯注,面团必须在离圈线稍隔几毫米的距离停住,并且要同样直径,这样烤出来的小圆饼才个个同样大小。

      ◎享受小圆饼
      Macaron比较甜,与微苦而散发浓香的咖啡搭配,尤其理想。配茶或者葡萄酒,也是欧洲人常见的选择。
      如果有好几道甜点,建议你先别着急吃小圆饼,因为小圆饼的甜味可能让其他甜点黯然失色。
      吃不完的小圆饼,可以放在密闭盒子中冷藏,储存3天没问题。

      许多选择,简直让人拿不定主意。如果你喜欢东方式甜点,芝麻口味值得一试,浓浓芝麻香,甜得恰到好处。

      Les Amis旗下的餐馆,做出来的法式甜点很有水准,小圆饼的味道和口感都很出众。特别推荐salty caramel与黑巧克力口味。
